Nobody seriously talks about playing outside of theme. I assumed you were unaware of the need for cold immunity.

Until Armoured Corps, all of my lists were non-theme, more or less. They're just so restrictive for relatively little reward, in Khador's case. It's a hell of a lot easier to build the combined arms lists I prefer out of theme

What's so great about Khador's themes that we can't talk about non theme? Jaws has little benefit outside of a spam list, Wolves is atrocious, Legion would be hard put to be more one-dimensional if it tried. It's a hell of a lot easier to build a balanced list outside of themes. Playing 8-20 points down is a very bad idea. Jaws' theme benefits are trash, but even getting a handful of extra guys is worth the limitations. Wolves and Legion are not nearly as bad as people say they are, they have some very nice theme benefits that make up for the narrow options. Khador also has a pretty wide selection of mercenaries and a very powerful Ranking Officer to shore up poor unit choices. A 'balanced list' is what Winter Guard Kommand and Armored Corps are for. Your second list should have a more focused game plan and choose the tools to execute it.

I guess it just boils down to a difference in philosophy. You seem to look at the themes and go 'I get these benefits for taking these', whereas my mind goes 'I have to give up all these things to get these benefits'.

The benefits outweigh the things you give up, as evidenced by >99% of all steamroller lists being in theme.

I think there's a couple options in Khador for out of theme play that haven't been looked at particularly. Eg: Ruin with Strakhov2 seems legit and Sorscha1 out of theme feels possible to me at first glance.
But that seems like a discussion for another thread!
Cheers, Dave
