Played some more games and thought I'd post some quick notes here as updates.
Grim vs Rhyas - this was a pretty infantry heavy list. I hemmed and hawwed about going for the assassination as he was camping nothing but ended up playing for attrition. Chewed through all of his army and forced him to go for an assassination attempt. I was camping a fair amount and he had to let me spawn whelps on his model's landing zones so I was 17/17 and he fell short by a fair bit.
Grim vs Vayl2 Oracles - a little more beast heavy, but without BFS (they didn't have the models and didnt want to proxy afaik). 2x Scythean 2x Ravagore Seraph Blood Seer and support (may have been a unit in there?). I kill a Scythean and cripple another but I position Janyssa in such a way as she doesn't block arcing fire onto Grim from a flank and the fact that he can shoot me with the Ravagores means he's just barely able to kill me (I wanted Janyssa entirely in Rubble for that sweet sweet cover but I placed my Mountain King in such a way that she couldn't be in the rubble and within an inch of Grim). Could have played more conservatively and won on attrition probably but I tend to play super greedy especially in non-tournament games.
Grim vs Exulon Thexus - Very similar to the list I faced at Kingdomcon Masters but used 2x Thorn Gunmages rather than another unit of drudges. This time I played a lot more conservatively and initiated the attrition war by trading the Mountain King for one and a half of his two monstrosities. Unfortunately the scenario was Incursion which is already a huge issue for Power of Dhunia. He's able to eke out a scenario victory as I'm starting to clear up the attritional endgame. I can't wait until Incursion is no longer a thing, it can be almost an auto-loss for Power of Dhunia in a lot of matchups.
All in all still pretty happy with Grim1 in this current configuration. I want to get a better feel for how hard I can push him and when to play more conservatively but in general I am quite pleased with his performance.
