I have not played Circle in quite a long time... not since the beginning of Mark2-
I am looking to build a couple competitive 75 pt theme force armies.
I currently have the following pieces- Casters: Mohsar Kromac 1 Baldur1
Beasts: Megalith Stalker x2 Gorax. X2 Pure blood Feral Ghetorix Woldwatcher Woldwarden
Other:
Shifting stones Gallows Grove Stoneward & woldstalkers Stone Keeper Blood trackers Nuala attachment for blood trackers Druids of O
What themes should I use considering my existing models?

What would be some Economical additional purchases to make a couple solid 75 point theme armies?

You have a good selection to choose from minus a couple pieces. Woldwyrds are very good, I usually fit at least 2 into every list. If you take them you'll want 2+ of them. They are also pretty cheap to buy. Sentry stones are the other one. They give circle the most models per point after 1 mannikin revive. With steamroller 2017 you'll want some cheap solos for flag capture. Gobber chefs fit this role nicely for 1pt each.
Warlock wise, what seems to be popular for good reason is: Krueger2, Baldur2, Kromac2, Una2, mohsar, Wurmwood, Tanith and Kaya2/3.
I'm personally a big fan of Kromac2. Using the above globally good purchases + kromac2 and what you already have, you could do something like this:
Kromac, Champion of the Wurm - Warpwolf Stalker - Warpwolf Stalker - Pureblood Warpwolf - Woldwyrd - Woldwyrd Swamp Gobber Chef Sentry Stone & Mannikins Sentry Stone & Mannikins Shifting Stones Tharn Bloodtrackers - Leader & 9 Grunts
Obviously that list can be improved, but that list is just something quickly thrown together.
In regards to themes, I think you'd need to purchase quite a lot of new models to fit in theme.

I really can't comment much on competitive lists since I've not played enough Circle recently. Your three existing Warlocks all look playable to me, though.
As for Themes, Circle only has a 'beast heavy Theme for Wolds - and the Wolves/Reeves Theme is really most interesting for Ambush on Wolves of Orboros - so if you want a Theme, I think you will get the most benefit out of the Tharn Theme simply for Snacking on your 'beasts.
Bear in mind, though, that PP has hinted that they want to release more Themes in the following months so every model has a Theme it belongs in. If there is an upcoming Blackclad Theme (which I bet there will be) that could suddenly become your best bet.

How set are you on the theme idea? You don't necessarily need a theme to make a competitive list, and the themes aren't cheap to get into. For the tharn theme, you'd need ravagers + ua, a tharn shaman, and either a white mane or night witch. (not cheap) For the wild hunt, you'd need reeves + ua, wolves + ua, and 2 woldwyrds. (also not cheap) For bones, you'd need 2 woldwyrds, a woldwrath, and a fulcrum. (not cheap) I have seen people go 'beast heavy with the Tharn Theme, so that was why I suggested it (Baldur2, for example, gets both Megalith and Ghetorix in Theme and Una2 becomes a feathery swarm of RFP terror). Though I agree that non-Theme is easier and perfectly viable.
