So I'm new to the minions faction and I had a question about Mealok that I felt I should ask before I got too many games under my belt. Does his feat provide you any of the defensive benifits of incorporeal or is it simply for denying free strikes and moving through friendly models? Thanks for the help.

For all intents and purposes the models in his control (undead or not) gain the incorporeal rule. But this aspect only lasts for one turn (not a round). So you can move through models, buildings, rough terrain, etc... While ignoring non-magical free strikes. Once you attack, or at the end of the turn, the model is back in the flesh.
