Nice list!
I usually pair Kaelyssa with Rahn or Vyros2.
With Rahn, I use Rahn as the main list (assassination) and Kaelyssa handles Rahn's poor match ups.
With Vyros2, Kaelyssa is usually dedicated to Warmachine (assassination/scenario) while Vyros is focused on Hordes (attrition/scenario)

It's funny, our lists are identical, except I use Max MHSF with E3 instead of double Sentinels. I feel like your list is probably better into Hordes while mine handles Warmachine a bit better. With that in mind, I feel like you have many options for your pairing. One thing I think your army might struggle with is a gunline that can deny you the feat. This means that Vyros2, Issyria and Helynna are all good options for you.

I was thinking about Vyros2 or Helynna. My main concern is a Khador Harkevich/Karchev jack spam combined with a Vlad or Irusk gunline. I think Kaelyssa plays well into the jack spam, but I'm not sure how she would do into the other list. The one turn of stealth is good, but the sentinels might still be too slow. I'm not sure how to avoid list chicken.

Believe in the sentinels. With Kaelyssa you have a turn of stealth and no charge and with UA you have a turn of ARM 20 with mini feat. ARM 20 means blast damage is generally not a problem even boosted it will struggle to take them down. You also have Disco for some some ARM 22 action and out right immunity to blast damage. Not saying you wont lose some but Sentinels get work done vs Heavy Jacks. Besides do the old intermix you squads and the few that get taken down by the direct hits just fuel your vengeance move

I prefer double Strike Force with Kaelyssa, as they hit about as hard as Sentinels do against warjacks, they can assassinate warcasters that the Banshee knocks down, and they're a lot more flexible. My warjack loadout is broadly similar to yours, though sometimes I take Moros to give me another way to set up Strike Force assassinations.
When it comes to avoiding list chicken, I have three methods that I employ, with the method du jour depending one what sort of army I feel like playing.
1) Take a main list and a supplemental list. The main list is built to play against 3/4 of the game, with the supplemental list covering its weak spots. So when in doubt, you play the main list.
2) Build your lists with faction opponents in mind. It's not as hard as it looks to build an army that can take on the vast majority of Khador armies, for example, and do equally well against massed Winter Guard and massed warjacks. That way you know what army to drop as soon as you see your opponent's faction.
3) Build lists that are well-rounded and broadly similar, so you can predict what list your opponent will take and choose accordingly. For example, I pair my Kaelyssa double Strike Force army with an Elara2 army that has a lot of Mage Hunters, which looks very similar to the uninitiated but actually has a completely different set of strengths. I know that my opponent will likely pick whichever of his armies will do the best against lightly-armored, Stealthed infantry, so I can choose my army based on that knowledge.
