Looks like a good start of a Armed corps theme. If going that rout some Tanker Solos, Ua to Demo corps would be great.
Ever played Khador before? Or against?

Good haul! You are pretty much straight in there for an Armoured Corps theme with Irusk1. With such a strong core of the MoW lists, I would look at getting a couple of the support models. The Man O War Kovnik is very useful, and you should get the Officer for at least one of the Shocktrooper units. So a good basic list with that would be: Khador Army - 75 / 75 points [Theme] Armored Corps(Irusk 1) Kommandant Irusk [+27][/b] [/ul] Man-O-War Kovnik [0(4)]Battle Mechaniks ( max) [5]Man-O-War Bombardiers (max) [16]Man-O-War Demolition Corps (max) [14]Man-O-War Shocktroopers (max) [16][/b] [0(4)][/ul]Man-O-War Shocktroopers (max) [16][/b] [0(4)][/ul] I've put the models you don't have in BOLD. That's a good basic army that doesn't require many new models for you. I'd happily play that list into most things, to be honest. If you choose to carry on with Armoured Corps, you should consider the Man-o-War Tankers (Strike Tanker and Suppression Tanker) and the support unit Atanas & Standard. The Demolition Corps and Bombardiers also have Officers; if you like the way they play, absolutely consider getting them. There's also a lot of room to expand into other casters; Irusk2, Vlad2, Kozlov, Sorscha3 all seem to be fine choices for Armoured. Butcher3 is probably good too, as is Strakhov2. Butcher 1 might be good, but not a lot of testing has been done. Same with Vlad1; he makes everything better. Beyond that, pick a theme you like! Winter Guard Kommand is probably one of our more potent ones, and since you have the Gun Carriage you already have the most expensive model in the theme.

He's also missing 2 of those shocktroopers (1 is a min unit). Sylys is a great pick for Irusk1 for the +2 range on spells, and more of a focus on the Bombardiers/Demo Corps gels better with Irusks toolbox of slowing the other guy down and the 4+ tough.

Really took “the deep plunge” and bought a whole army 😂 but I’m looking forward to learning, and getting better!

In case it wasn't obvious, you have more than enough models to play a standard tournament sized list that would he perfectly legal in just about any format. However, the preferred method to play this game is with a theme list, which essentially gives you in game bonuses for limiting which models you take. Since you have so many Man-o-war models already, you're pretty close to an Armored Korps (the Man-o-war theme) theme list. Therefore, if you buy a few extra models, you'll have a more thorough and competitive list.
PS - Irusk1 is one of my favorite casters, and a great choice for Man-o-war armies, so you're off to a fantastic start already.

You could probably just convert the min unit models into officers and kovnik.
I'm a bit addicted to adding two Kovniks, but I think we really need to limit ourselves to 1 and learn to play that way...

As people have noted, this is a great start for an Armored Corps list, where some models will be free.
I'd consider:
Irusk1
-Conquest
Max MoW Shocktroopers + UA
Max Demo Corps + UA (character UA, Dragodavich)
Max Bombardiers + UA
Kommandant Atanas (character unit)
Min Mechaniks
MoW Kovnik
MoW Strike Tanker
Dirty Meg (mercenary solo)
What you're lacking are the various unit attachments for the MoW units, the Atanas unit (he lets your MoW move through each other, as well as handing out other benefits) and the Strike Tanker. The tankers (Strike and Suppression) are good pieces for MoW lists, but I thought in this list that Conquest gives you some board control against single wound warriors, so you don't need the ability of the Suppression tankers to do the same.
Dirty Meg is included more as a "what do I spend 3 points on?" option and is frankly a bit of a gimmick. My reason for choosing her is that she can make an opposing warjack stationary if she shoots it. That can be handy in any list, but MoW Demo Corps get an additional damage die against stationary targets. If you also cast Battle Lust on them and charge, they end up as P+S16 + 5D6, which is impressive (and probably massive overkill).
Other things to think about getting which aren't in the list:
Spriggan warjack - the Spriggan is a good utility jack, and one of the few anti-stealth options available (the Victor colossal is another, but quite a bit more expensive).
Kayazy Eliminators - these are a great unit of two models which can fit into lots of lists as the mercenary unit choice in a theme list.
If you want caster variety for Armored Corps, consider Kozlov1 (the battlebox caster) and Vlad2. Sorscha3 is probably also a good pick, although I'm not convinced you have a great jack loadout for her.

Winter Guard Kommand will provide a nice foil to the Armored Corps lists. As has been previously mentioned, that Gun Carriage is going to serve you well.

In terms of models, you're closest to having a Jaws of the Wolf (warjack theme) list. You'd need some support solos and a caster who is more warjack oriented. The theme benefits are lackluster but it still sees play because Khador warjacks are awesome.
As others have mentioned, our strongest theme is probably Winterguard Kommand. You'll need a lot of models though, generally revolving around riflemen with lots of rocketeer weapon attachments.
Legion of Steel is our Iron Fang theme with a lot of cool models, but it tends to be very one-dimensional. Wolves of Winter is the "Greylord and black magic" theme but its widely considered pretty terrible simply because Khador doesn't have enough of those models to make it feel like a real fleshed out option.

As others have said, Winter Guard Kommand is probably the next choice. You've got a few Winter Guard models. Not that many, but the Gun Carriage is an excellent choice and the mortars can be free in theme.
There are some lists for WGK that don't ues that many Winter Guard models: one unit of Infantry or Rifles, some artillery, the Gun Carriage and then jacks. WGK is quite a good theme for running several jacks as they get an Advance Move theme bonus, which really helps with the low basic speed of Khador jacks.
In terms of WGK, in addition to what you have, you will probably want to think about getting:
At least one unit of Winterguard Infantry (+UA) or Winterguard Rifles. If the Rifles, you also need to source some Winterguard rockets from somewhere - these are a weapon attachment to either unit, but come only in the Infantry box. Some builds run multiple units. If the Infantry, they really benefit from their UA.
Mercenary unit: Lady Aiyana and Master Holt + Koldun Kommander Valachev (a Ranking Officer UA) - this unit can provide a damage buff at range (nice as this theme tends to do quite a bit of ranged damage), or magic weapons to a model/unit. Magical attacks are a rarity in most Khador themes, and you need at least one list with them available. The Armored Corps lists people have been discussing don't provide this, so definitely something to think about in your other list.
Kovnik Josef Grigorovich - a solo who provides very helpful buffs to Winterguard models/units.
Warjack: Spriggan - not for all casters, but the theme tends to be quite shooty, and the Spriggan helps by removing stealth
That's quite a bit more in terms of model numbers and cost (and painting time!). Stronger casters in WGK include Vlad1 and Butcher3.
