1) I'm a new player interested in playing minions. From what I've been researching it looks like I can freely combine Thornfall Alliance and Blind Water Congregation as long as I stick to warbeasts specific to my warlock's faction. Is this correct?
2) I've read over Gaston's army list for beginners, it's a great place for start I think. But I was also wondering if anyone has any advice for mashing together Thornfall and Blind Water in the same Army.

Same army or same list pairing?
Army-wise, Will Work for Food is the theme that supports a mash up of Gator Support and Pig Beasts.

In a single army list, there are the restrictions outlined.
In a list pair, you can have a Thornfall, Blindwater, WWFF or non theme paired in whatever combination you like.

Short answers 1) Correct. 2) Not any major advice
Long Answers 1) Indeed, you could have Farrow caster Midas getting around with a unit of Gatormen posse so long as Midas himself only has Farrow beasts.
On a similar notion JagaJaga might like herself some Farrow brigands but may only have Gator beasts in her battlegroup
You can offset this in lists by taking along Rosh or Wrongeye to help you run some other beasts, though it is a heavy cost.
2) No real major advice really jumps out. Much of your unit choices will depends on your playstyle, what is in your local meta as well as expenses. Currently minions have 3 themes Thornfall Blindwater Will work for food
Each of these lists has its own flavor, needless to say you will struggle to find anyone running Gator posse outside Blindwater theme. That said a unit of Farrow brigands + Warlord can be a good addition to many lists (pig player bias)
