Im thinking of buying my first Gargantuan and am debating between the Hydra or the Mammoth. To me Gargantuans seem very high risk to put in a list, they are close to 40 points that can be one rounded despite having just over 50 boxes. Yet if your opponent does not have the right tools to deal with them they can really dominate the board. So how good are Gargantuans in Skorne and is there one that is better than the other?

Neither is really better than the other, its a matter of tools. I personally prefer the Hydra but that's because my favorite Warlocks are able to deliver it straight to the enemy warnoun (Makeda1, X2, Morgie), because otherwise it has the defensive stats of a chain-link fence. Meanwhile, the Mammoth is more of an Anchor to the Hydra's hook - it serves as the cornerstone of a list, hanging out in a zone and counter-blasting peeps.

You would probably be happier with a siege anamatrix purchase if you are looking for a huge base center piece model. Otherwise I would recommend the mammoth because its play style reduces the risk of just losing it while you are learning to play with the model
My warning though is my mammoth has been sitting on my self for nearly 6 months now after a month effort to get it on the table. I have also skipped the hydra completely because of my mammoth experience

I own both and personally prefer the Hydra. His Animus is super good, between your caster, him, and a shaman you can deny shooting to the whole board in a lot of cases. Plus 9 melee attacks should be enough to take care of anything you point him at. Granted, it is all on personal preference and playstyle.

I like them both but think they're a bit too expensive at 38. I recently found more use for the hydra, but think mammoth is safer overall. The reason why I've been playing hydra is that I purchased the model and Xekaar has some good synergies, but it's a difficult terrain to explore. Very frustrating sometimes.
Mammoth is very good with:
Zaal1. Can use +2ARM to full extent, gives some good range power, kills every model in the game under feat+hex blast and provides some solid late game to a list that tend to self deteriorate very fast
Xerxis 1 You see the trend here: arm buff. My Xerxis1 mammoth never died, but now that xerxis has synergy with large bases (3" threat range is no joke) I prefer titans. Mammoth is still good though.
Zaal2 Similar to zaal1, late game potential and good use of vision. Synergy with mage sight too.
Hexeris2 Black spot, banishing ward and A LOT of healing. In my opinion hexeris can't protect a hydra as effectively as a mammoth, so I stick with it. The big guy also adds damage output that hexeris lacks.
Hydra shines with:
Makeda1 +2 arm was the trend with the mammoth, +2SPD will be for hydra. Feat protects it well and carnage stacks very well on 9 attacks.
Xerxis2 +2SPD a lot of accuracy in both rapport and feat (sprays are amazing under feat) and ignite. It will probably be a fire and forget bullet but can set piece trading well in your favour, with a 14" missile that will kill every target.
Xekaar Yes it's strange but oh boy does +2/+2 from mortality help those sprays. FEAT also has a lot of synergies, becoming effective 15" against guns and preventing hydra from dying (higher DEF really outshines mammoth here). Psycho Surgery, Snacking and Regeneration from hydra can be ridiculous sometimes.
Wouldn't say one is better than the other, just situationally. They're also good enough to be fielded in my opinion, just be wary of lists that piece trade with cheap models like cryx or some menoths/khador

Agreed that if you don't own a derp turtle, buy that first.
That said, it depends on your warlock. I've enjoyed the mammoth with Xerxis1 (and before Winds of Death: Hexeris2 and Rasheth1), but I've liked the hydra with Makeda1.

I will say that I love my Mammoth as an anchor to my lists. It is often impactful just from the gun, alone, and great at bullying the board. I do rank it as one of the best Gargantuans in the game with respect to damage output, options (gun and melee), and durability.
I have not tried a Hydra yet for comparison.

Mammoth for stear, hydra for clear.
The Mammoth can really dictate the board and is one buff mother, though his point cost is a little high. However, his damage output is equal to 2-4 cannoneer shots at range with the melee weaponry of a bronzeback.
The Hydra, on the other hand, is made to be used as a one punch piece trade, only it trades itself for practically all of your opponent's infantry or more than a few important pieces. His sprays are... relatively accurate with rat 6 and he has 5 of them a turn at 6 inches or 1 of them a turn at 10 inches with an increased POW from the base 12 to 16; they are also all corrosion based and automatically give continuous corrosion on hit, not crit. Now that infantry heavy lists are making a comeback, he might be worth putting into your lists. Also, your opponent MUST down him in 1 turn, which is something I love. 1 fury = 1d3 + 3 health regeneration plus he has snacking on each of his 5 heads, giving him an additional d3 health each time he kills a living opponent in melee. Include the extra d3 from a beast tamer and he can get anywhere from 10-24 health in a single turn x.x;
In the end, I'd probably only choose the hydra if you are really having issues with lots of infantry that aren't immune to corrosion effects. The Mammoth can openly replace several beasts at once, which makes it a good combo for anything caster that can up his RAT or ARM, since he cannot heal himself like the hydra. I'll also say this, a Mammoth sitting in your opponents zone will definitely ruin his day.
