Am I being unreasonable in thinking that Helynna and V1 can make for a decent pairing?

I feel the lists are different enough to present different obstacles for my opponent. What do you think?

I think you have to look at it differently. I think the lists are similar enough that you can fairly accurately guess which list your opponent drops (given several Myrmidons and anti-shooting in both your lists). This gives you the chance to play the better list into it.
That said, one list is defensive, the other offensive, so I think you should be able to deal with a variety of opponents. If you want to go all-out ARM on Helynna, you could even try to run Forges of War (the Sentinels give you a better all-round list but you already have Vyros for ARM cracking and more Myrmidons means more ranged game to make list selection trickier for your opponent). I'm not sure if it is better or just different, though.

I could build Vyros with Sentinels if needed and then run Helynna in theme? (perhaps drop Sentinels and a Manticore for Hyperion?)

One piece of advice, from a better player than me, i've taken to heart is not to run Sentinels in both lists. There are enough things out there that destroy them. If you only bring rock, to rock paper and scissors, you will lose. The biggest drawback I see in your pairing is how similar your lists are. 54 points are the same between the two lists. The things that don't care about either manticores or disco, will destroy both of your lists. A better approach is to build your two lists so that one of your two lists can tackle all the problem matchups. You have some bases covered, Wormwood - drop Vyros, check. So for example, what list can you drop in Khador that runs ~60 WG with a mountain of rockets under Irrusk or Vlad 1? Can you handle 10 maurauders with Harkavitch. Other like Fyiana 2 you don't have a good counter for. You can't counter everything, but those are some likely problems. Some time, hop on Discount Games and look at their tournament winning lists. Try and figure out how you can tailor your lists to tackle those pairings.

If I add Sentinels to Vyros it would only be because of running Helynna in Forges of War theme (and therefor removing them from Helynna)

Helynna with Forges of War has done decently into Legion for me. They do not generally appreciate the high ARM. I think Khador becomes a list chicken problem because Vyros can deal with enemy heavies but has trouble into Winter Guard spam, whereas Helynna does better against rockets and snipers but struggles with too many heavies... If you can predict what your opponent will drop, it becomes easier.
