So I have been given the chance to pick up a second unit of strike force at a relatively reasonable cost and I was just wanting to ask if I would even have a reason to run two units or if I should just pass it up?

I have not personally done so but it depends on your meta and what you want to play. There can be a case for it if you see a lot of light jacks in your area and then you can have both UA's on the field which can change up what your units will go after.

Jack spam is still a thing. With Ossyan they make Jacks disappear.
Infantry is also probably going to make a resurgence with SR2017 so they should have more to do in most match-ups.
I expect MHSF to see much more playtime in the coming year but double MHSF is probably still going to be corner case.
However, I would say buy them anyway. Mage Hunter theme might switch them on.

I play against a lot more Warmachine than Hordes locally, so I am tempted to field double MHSF simply for 'jack hunter. Whether Ossyan, Issyria, Ravyn or someone less obvious will be my Warcaster for it remains to be seen.
Also, nostalgia. I played a lot of Will of the Nine Voices (Ravyn with triple MHSF) back in Mk2 and was surprised to discover that the list really clicked for me. I haven't tried it in Mk3 yet but - especially with SR2017 coming - I'm optimistic about the possibilities.

I play with two units of Strike Force all the time. They're good against every Warmachine faction, for obvious reasons, and they're useful against Circle and Skorne, due to the former's reliance on defensive spells and the latter's reliance on easy-to-kill support.
I most often take double Strike Force with Kaelyssa, as they compliment the hit-and-run style that is the best way to play her. The Strike Force can either swarm the enemy's flanks and envelop them, assist in an LOS-ignoring assassination run, or shoot a heavy jack off the board each turn.
Two units of them is, generally speaking, better than one, since that gives you enough shots to kill ARM <20 warjacks and enough bodies that some Strike Force will survive to help with the assassination. However, one unit is fine if you have a specific role you want them to fulfill, be that being the target of an upkeep spell or acting as your skirmish screen.
