So there isn’t much fluff on any of the archons yet, so this is mostly just speculation.
Archons appear to be manifestions of various deities ( or in the case of the void archons, the void).
One possible reason we haven’t seen the cyriss and nyssor archons is because pp doesn’t want to overload us.
Do you think it is possible for nyssor and cyriss to have archons?
Did I miss any other obvious deities that should have one, too?
I think the rest of the elven gods are gone/ dead

Probably for several reasons, but the biggest one I see is that Cyriss and Nyssor aren't closely tied to the Oblivion/Infernals storyline. I doubt we'll see a Cyriss archon any time soon, because the religion is pretty well restricted to just a single (mini) faction. Nyssor has stronger fluff reasons not to get a archon, namely lack of a strong presence in the material world and followers who have to spend a good deal of time and energy making sure their god doesn't die.
Sure, we may see them in the future. Because they wouldn't have the cross-faction availability of the other archons, I can see why they weren't included with the others in Oblivion.

Its possible that Cyriss can't manifest Archons at all. Given that Cyriss is completely grounded in the material plane, manifesting a semi-autonomous 'angel' might not be possible. Cyriss doesn't even collect her follower's souls, since they get grounded to the material plane too via their metal bodies. Cyriss is probably actually a pretty weak deity given how we know a god functions in this setting(god's gain power from the souls of followers that exist within their domains. The more souls, the more powerful the deity). It might explain why Cyriss only communicates and manifests power in very cryptic and subtle ways. Cyriss is incapable of doing more powerful acts because how Cyriss operates doesn't give her much power.
Nyssor might be unable to make Archon's for the same reason, he only exist in the material plane. Plus he is an incredibly drained deity with few followers.
The real interesting thing is that the existence of Void Archons implies that there is actually something sentient in the Void. Perhaps the Skorne do have a god after all. Its just a completely selfish god that only exists to consume their souls in everlasting torment.

Let me go in to pure speculative mode for a minute:
The whole Nyssor/Everblight/greylord thing is terribly murky to me. Why were neither the Frey lords or everblight not able to to anything with Nessie? Possibly because they didn’t want to. Perhaps Nyssor cut a deal with both parties to restore their power and create a “winter kingdom”. Perhaps an archon could work for Ret, Khador or Everblight. There could even be a theme force with greylords, blighted Nyss, and regular Nyss.
As for cyrsiss...perhaps she calculated this threat and decided to make a more overt move? I could see a convergence archon also working for cygnar or crucible guard.
Maybe a theme force for that too, with convergence angels, stormsmiths, and rocket men.

I would think that Cyrissian Archons would be construct bodies built to replicate the powers and abilities seen by the other Archons. They already have some of the similar aspects seen in what they deploy now.
Everblight isn't even a consideration in this. They are the Dragonspawn/Blighted Troops army. Unless Everblight could corrupt a current Archon (or study a slain Archon somehow in order to BUILD one), the closest we're going to see would be a Nephilim-style Solo or a super-Grotesque, or a non-Warcaster version of Thagrosh.
The elves are a different story. Their gods are on Caenn (that being part of the problem). The closest I would say we have seen would be in Goreshade's return. But I wonder if the gods somehow learn how to start imbuing souls in to the soulless, we may see something arise from that?

I remember during the dev talks, they mentioned the void archon being a sort of unknown entity. So if there’s one with a ret army, it could be an archon of Nyssor. Sure, it feels a bit cheap, and certainly less cool than an actual Nyssor/Cyriss archon, but it’s something.

-ahem - there is no collusion between Nyssor and the greylords. I repeat, no collusion.
