In the situation presented, the Gun Carriage cannot advance any further, and thus its movement ends, and you check all the relevant stuff that triggers at that point then. that is really lame! who can we email to get this looked into? Why would we? it's just a consequence of having a well-written rules set. Well-written and precise rules can quite often throw up counter-intuitive outcomes. Doesn't mean they're bad rules.
Also means that standard bearers actually have a use in Mk3 beyond looking pretty.

It is a very waac raw meta play to do. Eh... Equating this one single (perhaps un-intuitive, but legitimate) interaction as an example of the "win at all costs" mentality is...questionable.

Would the new standard bearer be considered the same model or a new model after take up. The gun carriage can keep making impact attacks as long as it is hitting new models.

The Standard Bearer model doesn't change; another model is destroyed instead. It is similar in a way to Sacrificial Pawn, if it helps to think of it that way. If this model is destroyed, you can choose a Grunt in this unit within 1" of it to be destroyed instead. Effects on this model expire, and it gains the effects on the chosen Grunt. Remove the Grunt from the table instead of this model. This model has the same number of unmarked damage boxes as the chosen Grunt.

Similar question concerning take up, different application. If you slam a warnoun, overtop 3 models (a full weapon crew unit), does take up allow the weapon crew unit to effectively prevent one of the damage rolls by having the weapon destroyed and using take up to destroy another model which has not had damage rolled against it?
Im not sure the sequence of damage rolls here and i had assumed they were simultaneous. I would think the active player would decide damage roll sequence.
