So I finally decided to buy some Destors (50% off, so no excuse not to) and I was wondering how people are using them nowadays. During MK2 they weren't that interesting, but with the boost of cavalry in MK3 I hope this has changed. The obvious choices are Ossian (quicken, feat) and Vyros2 (veteran leader, deceleration to keep them alive) and Issyria (duh), but what else am I missing?

If you put something on top of them on the shelf then you don't have to clean the dust off nearly as often.
I joke. Mostly.
There are a few places where people have tried to make them work. Some are better than others. I have mostly given up on them with the tools the faction currently has available to it but new releases might change everything. If you got them for 50% it's still worth it because they are definitely NOT unplayable I just usually find more value in other options. Here are some ways I have tried to make Destors work in order of how much potential I can see:
-Issyria with IR and Disco bubble ensures they make it to the fight. Issyria's feat gives them a pretty reasonable chance to make their points back. -Ossyan. Quicken for DEF15 against guns and absurd threat range on assault shots or charges. They are actually the best target in faction for Fortune because their inherent accuracy and volume of attacks. -Elara2, ST one of them and they can do some work on a single hard target. Make sure you do the attack with the ST dude last because the Lance rule is awful. Feat gives them massive threat range. -Garryth, Apparition lets them be placed out of combat then keep charging things which is one of the few times they are useful -Vyros1. Again IR makes them survivable but they are sub-optimal choice to apply his feat because of the horrible Lance rule. -Dawnguard Spam with Vyros2. Some people like this. I'm waiting for a theme force to actually make it good.

There was a list floating around earlier in Mk3 that ran double Destors with double Thanes and Scyirs with V2 - using the double buffs of Scyirs / V2 and the new cavalry rules to have high RAT/MAT models which were reliably dropping lots of infantry with each activation. I think it ended up grinding to a halt with the mass ARM you ended up seeing though.
