Like others have said: playing beast heavy into heavy Infanterie is pretty much asking for a bad time
i think double thrones with the right caster, namely lilith1 can do a lot of work.
or our new saviour kallus1 in pt. Or anamag if you want to bet on not having to play into quality guns

Seems to me this all immediately went off topic of the general 'how do we handle scenario without PTs.' There are answers to Maelok, but in terms of general scenario play, we aren't in too bad a place. Make sure you have the LOS blocking terrain on the board, and use it. If you're setting up the board don't have the terrain too equal, make choosing a table side a relevant choice. This includes giving your opponent the giant pile of rubble or whatever of they lack pathfinder. We don't have easy access to clouds, but we do have them. Take a look at the Gatorman Husk if you want to just throw a giant cloud up the table for your army to run behind. Thags1/2, Kallus and Vayl2 can also do this. Hellmouths, incubi and gremlin swarms Cheap models who can run to toe the wide corner of a zone as needed. In the case of heavy infantry, make this difficult for activation order/formation. Sure a gator can kill that shepherd, but then the rest of the gators won't be in formation if they charge your raek. Ultra tanky models. Especially in the case of multiwound infantry, they can only get so many models in melee range of a large base. Sure, 5 demo corps can kill a buffed typhon, but 5 can't fit around him. Casters who can take a beating. It sounds dumb, but sometimes I push my caster up and have my contesting model behind them. Thags1/2, Lylyth3, Abby2 and Bethayne (aww) can do this- obviously depending on what they're facing down.

Another thing you have to do if you're going second in a live scenario is don't let the opponent score on your second turn. Even if you're forced to sacrifice models, do it. You have to balance your models with scenario, and if you're playing beast heavy you want to recognize at the beginning of a game when scenario is going to be difficult for you. If that's the case be prepared to use some of your support as contesting pieces right away instead of the job you brought them for. It's usually better to lose one of them instead of a heavy.

Last time I checked (which is not recently in the case of gators, admittedly), legion still outplays gators in terrain except specifically water. Going second generally gives you the advantage of terrain choice, and that's supposed to matter in mk3. I usually don't mind going second specifically because exploiting terrain can be so clutch with legion. With smart placement, you can mitigate overwhelming odds with some decent terrain pieces to work around.

We certainly hold the advantage with terrain, but Maelok does give all of the gators incorporeal on his feat turn, which is all they need to get into the position they want to be in.

Well, we have Ammok now, so they are goning nowere. Especially fun if your opponent doesnt really plan with it (I allwys tell my opponent what my models do, as everybody should, but two turns in people forget....especially me xD)
I think there are a lot of primal terrors lists now that can grind it out with gators. We take damage allmost as good, but we hit way harder in return. And 2" extra deployment and hellmouths help a lot with szenario.

We certainly hold the advantage with terrain, but Maelok does give all of the gators incorporeal on his feat turn, which is all they need to get into the position they want to be in. Clutch offensive feats can be countered by just not giving your opponent an ideal feat turn, however. If I know my opponent is hinging on his feat to pull a win, I'm going to do everything in my power to limit how much use he can get out of that feat.
