I've played this Madrak 1 list for a few games and I really enjoy it. I don't own double champs so I only take 1 unit (I am going to pick up the 2nd unit soon) but who pairs well with this list?

This is off your topic, but the chroniclers tale of most is brutal on top of even ground. In my similar list I have him and a champ hero and axer instead of whelps and Mauler.
To answer your question, I'd say the pair is probably in PoD, and the traditional answers are probably Doom2 and Grissel2, with Ragnor as an outside option. I'm going to be a little (okay, very) wacky and say that beast-heavy Horgle2, probably in SotN, might be an interesting alternative. He'll bring the highest arm you can, to mirror Madrak1 bringing the defense and push your opponent into a nasty case of list chicken. They'd probably wind up bringing a jack list for the ability to boost whichever roll they need to. Your pair will need to be able to answer that, although I found that this M1 BoH list can be quite good at scenario, so you wouldn't be completely screwed if you list the chicken game.

You've got a melee focused troop heavy list, so maybe try a ranged heavy beast list? Gunny or Grim2 in PoD? Doomy2 and 3 could also work, but they tilt more towards melee. Do you have any specific meta-problem lists you're trying to account of, or just looking for a general suggestion?

I love Grim 1 but Madrak 1 can already stop charges and fix MAT. Shooting is Madrak 1's main weakness and Gunny covers that well. I'd ask gdnerd about his Gunny list.

Gunny is good, Grim1 and 2 both could be good. Ragnor could be an option. Madrak seems to be one of those warlocks with a lot of broad capabilities and you need to get a good feel for exactly what he fails against before constructing a good pair for him.

Is the pair I've been running at major events this year since Lock n Load. I don't think this Doom2 list would pair well with Madrak but I could be wrong. Gunny on the other hand seems like a solid paper fit.

Reason being I would love to try out the GK instead of MK. Issue is however if you need to crack heavy armor the Gunny without Rage wont do it as they cap out around PS16. how viable do you think it would be to run w/o rage?

Rage is important. Without it there are a number of matchups that you 100% can't drop this into. Anything with more than a couple of heavies, or double Wraith Engine Dark Host for example.
Also, I've found the MK to be VASTLY superior to the GK, even when assassinating. Two 16s is often close to three 14s in terms of damage, and ignoring cover is HUGE. Sure you don't get push triage or stationary but the reliable output (and ignoring LOS) is a HUGE game. Two sprays will also wipe most units in the game in my experience, and helps you resolve matchups with blast immunity. It gets even funnier when their officer has tough and survives a MK shot and they need to spend their own resources to kill the officer to promote to a non-deafened model (which also costs them ANOTHER attack). On top of all that poking the MK is a waste of time because of whelps.
The MK is just 100% the right call and unless I was going for jank assassination I wouldn't consider swapping to the GK.
